Description

Students will be provided with the theoretical principles of health, safety, and nutrition which they will be able to apply to the early childhood curriculum.

Objectives

To develop the ability to follow hygienic procedures for food preparation, storage and cleanup and to serve nutritional meals.
To develop the ability to assess and manage illnesses and accidents.
To learn to recognize situations which are potentially dangerous or abusive and to take appropriate action.

Special Textbook Consideration: While this is an excellent textbook and highly used in early childhood programs across Canada, it is an American publication. As such, some of the contents will reflect American policies and procedures about first aid, food guides, etc. Relevant Canadian information and resources have been added to the preambles to each of the units within this course package. It is important to be familiar with local regulations and Canadian content. However, in cases where there are conflicts between the Canadian-sourced information provided in the course materials and the American-sourced information found in the textbook, both types of responses will be accepted as correct. As specified in the instruction package, ensure that you paraphrase and cite your sources when referring to the textbook or an external reputable source.
